Your Role
As our Head Butcher, you will ensure every cut of meat meets our top-tier standards for quality, consistency, and presentation, while maintaining the highest levels of hygiene and safety.
Key Responsibilities
Meat Preparation & Craftsmanship
Masterfully trim, cut, and portion premium meats with precision and artistry
Deliver exceptional consistency and visually stunning presentation in every cut
Innovate with new cuts, techniques, and preparations that elevate the dining experience
Hygiene & Food Safety Excellence
Maintain immaculate workstations, tools, and equipment at all times
Champion the highest standards of food safety and hygiene compliance
Ensure all meat handling, storage, and rotation meet strict safety guidelines
Team Collaboration & Leadership
Partner seamlessly with chefs and kitchen teams to drive smooth, high-performance service
Mentor and train junior team members, sharing expert butchery techniques
Contribute creatively to menu innovation, including cuts, marinades, and presentation concepts
Inventory & Equipment Management
Proactively manage stock levels, ensuring freshness while minimizing waste
Keep all knives and butchery tools in peak condition—sharp, safe, and ready for excellence
What We’re Looking For
Minimum 3 years of professional butchery experience
(fine dining or premium steakhouse preferred)Formal training or certification in butchery or culinary arts is a plus
Strong knife skills with deep knowledge of meat cuts
